Easy to Make Kababayan Bread

While I was growing up in Hagonoy, my Nanang Abe had this bread that's similar to cake but not really a cake in her small store.  She would usually buy it from the town center or someone would deliver them to her store.  I can't remember how much they were then though.  They are nice to eat with coca cola or Pop Cola which I would usually have for snacks. 

They are actually similar to muffin but quite simple though without any frills.

Ingredients
4 eggs
1 1/2 c flour
1 c granulated sugar
150 g butter, softened
1 1/2 c fresh milk or evaporated milk
1 tsp vanilla
2 tsp baking powder
1/2 tsp salt

Procedure
Cream butter and sugar.
Add in the eggs, one at a time while beating.
Put in the vanilla, baking powder and salt.
Put in the flour and milk, in batches, alternately while beating.
Pour the batter onto a greased muffin pan.  Each muffin mould should have at least 3/4 batter. 
Bake for 12 - 15 minutes in a preheated 180C oven.

  2. Mine didn't rise like the one in your photo.Seeing that at 15 minutes it was still whitish in color, I baked it for 5 minutes more. I used fresh milk.

    This is very good, turned out delish. Also, It didn't rise to a cone-shaped muffin. Should I mix it more to incorporate more air? How about adding baking soda? I hope that next I bake this, it'll look like yours. This recipe made 2 doz muffins, which my husband loved.

  5. I just tried this recipe although I only had self raising cake flour which I believe is the reason that it turned out with a mamon texture, and a buttery flavour.

  6. your cake taste good! however I would like to ask you how you make the original design the one with the middle. I heard you have to adjust the heat from 375deg down to 350 deg. can you please correct me on this one? tnx

  7. I did this and have a slight success with a slight dome at 400F, I saw at another recipe having 450F I still have to try a smaller muffin Tin and definitely grease it or dome will not happen
